Chocolate & Orange Mousse
This Mousse is really beautiful if you’re a lover of Terry’s Chocolate Orange you will love this one!!It is a great dessert for a dinner party as it can be made the day ahead and stored in the fridge until ready to serve!
Ingredients:
Mousse:
- 150g of dark chocolate( good quality 70% cocoa solids, really makes a difference trust me!)
- Pinch of salt
- 4 large free range eggs
- 50g of caster sugar
- 150ml of pouring cream
- 2tbsp of good quality cocoa powder
Orange Cream:
- 200ml of cream
- Zest of half orange
- Pinch of sugar
Method:
1: Place the chocolate roughly chopped into a bowl over a pot of boiling water to melt, making sure the base of the bowl is not touching the boiling water.
2:Next separate your eggs into two bowls adding the sugar to the bowl of yolks. Wisk the sugar into the yolks so that it is dissolved and smooth. You then separately whisk the egg whites with a pinch of salt until very stiff. In a third bowl lightly whip the cream and put aside.
3:Once the chocolate is melted remove the bowl from the pot and tip into your bowl of yolks. Whisk this mixture and add in the cocoa powder and also a shot of Cointreau to bring out the flavour of orange in the mousse.
4:Make up your orange cream by adding zest of half an orange and sugar to taste.
5:You then start filling your glasses with the mousse, I like to layer the cream in between the mousse or, if you like, finish the dessert with the cream on top. Place in the fridge to chill for 1-2 hours.
6:When you are about to serve I like to add crushed honeycomb on top for texture and for garnish. If you don’t have time to make honeycomb use a crunchie bar and roughly chop or crush. I like to serve this mousse with a chilled dessert wine!
