Delicious light delicate macaroons! simply can’t be beaten. These make a perfect Mothers Day gift and in keeping with the red theme I have chosen a strawberry flavor! you can dress these up beautifully in a basket or you can get creative and get the black-board paint out and paint the base of a tray so that you can customise your Mothers Day message!
50g of ground almonds
140g of icing sugar
2 large egg whites
1tbsp of caster sugar
red food coloring
125g of butter
250g of icing sugar.
1. Pre-heat the oven to 190. Line 2 baking trays with greaseproof paper.
2. Sieve your ground almonds and icing sugar into a bowl. Whisk your egg whites in a separate bowl then add the sugar gradually until it is glossy and holding soft peaks. Then gently using a spatula fold the almond and icing sugar mix into the egg whites until combined.
3. Put your mix into a piping bag and pipe small blobs of your mix onto your lined trays. Leave to rest for about 15minutes then bake in the oven for 5 minutes before turning your paper over and bake for another 4minutes. Remove for the oven and leave to cool.
4. To make the filling put your strawberries in a blender/ juicer and once blended pass through a sieve so it is like a puree. Beat the butter until soft then add in your icing sugar and strawberry puree. Then place this mix in a piping bag and sandwich macaroons together.
